Loving those beans....








 Soup week!  Just love to look at those beautiful beans.  Made bean soup, chili and Mexican chicken soup, all in one week.  The boys are going to get on me if I don't get off my soup kick.  I could eat soup every day!  I heard once that your system likes soup because it is easier to digest. I don't know if that's true, but I just know my system loves it!




Comfort food...

Homemade spaghetti and meatballs.  Salad, of course!  Comfort food!  Thanks, Ama, for sharing your delicious meatball recipe!!!!!!
 
Spaghetti and Meat Balls:
3/4 cup chopped onion
1 clove minced garlic
3 T olive oil
4 cups canned whole tomatoes ( 2 1 lb. cans)
2 2/3 cups tomato paste (2 6 oz. cans)
1 cup water
1 tablespoon sugar
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 1/2 teaspoons crushed oregano
1 bay leaf
1 recipe Italian meatballs
Hot cooked spaghetti

Cook onion and garlic in hot oil until tender but not brown. Stir in the next 8 ingredients. Simmer uncovered for 30 minutes. Remove bay leaf. Add meat balls and continue cooking about 30 minutes longer.
Serve over hot spaghetti. Top with grated Romano or Parmesan cheese. Makes 6 servings.

Meatballs:
4 slices dry bread
1 lb. ground beef
2 eggs
1/2 cup grated Romano cheese
2 Tablespoons chopped parsley
1 clove minced garlic
1 teaspoon crushed oregano
1 teaspoon salt
dash of pepper
 
Soak bread in water 2-3 minutes. Then squeeze out moisture. Combine with remaining ingredients, mixing well. Form in small balls (about 20). Brown slowly in 2 tablespoons hot olive oil. Add to sauce and cook 30 minutes longer.
